SOUTH INDIAN STYLE THAYIR VADA(CURD VADA)

A perfect South Indian delicacy to eat when one needs something less greasy, yet tasty! Unlike dahi bhalla, it does not includes sweet/spicy pani. I bet it's way more delicious than the restaurant ones when made from scratch. A little time consuming but an absolute party/weekend hit.


Cooking time: 30 mins Serves:2

Preparation time: 2 hours

What you need Qty

For vada batter:

Urad dhal 1cup

Rice 2tbsp

Green chilies 2nos

Salt To

taste


For boondhi:

Gram flour/Besan 1cup

Rice flour 2tbsp

Turmeric powder 1/4tsp

Baking soda Apinch

Asafoetida 1/4tsp

Water To prepare

batter

Salt To

taste

Oil To fry


For ground paste

Coconut pieces 10small

nos

Green chilly 1no

Salt To

taste


To soak vadas

Curd 1cup

Milk 1/4cup

Water 2cups


To assemble

Thick curd

(beaten) 2cups

Chopped onion 1cup

Kashmiri chilly

powder 1tsp

Chat masala Apinch

Curry leaves Few

nos

HOW TO PREPARE


For vada:

  1. Soak urad dhal and rice for around 2 hours

  2. Grind them into a smooth paste adding very little/no water

  3. Add chopped green chilies and salt

  4. Note: The vadas have to be fried immediately after preparing the batter to avoid excess oil absorption
