THAI RED CURRY

Kaffir lime, galangal, bird’s eye chilly- does it sound familiar? Yes! these are the authentic ingredients for a Thai curry. But what if you do not find these? Don’t worry. Follow this recipe, which uses local ingredients, yet not compromising on the original flavors.

What you need Qty
Dry red chillies 5
Garlic 6 cloves
Shallots 5
Ginger 1"
Lemongrass 1stem
Lime zest 1/4 tsp
Water To grind
Chopped vegetables
(Onion,Broccoli,Zucchini,
Capsicum) 1 cup
Lemon grass 1stem
Thick coconut milk 3/4cup
Water To adjust consistency
Sugar A pinch
Salt To taste
HOW TO PREPARE







Note:
1.To prepare the scented rice, take one cup of Jeera shala/Seeraga samba rice. Boil the rice with a bay leaf, coconut milk (instead of normal water), a pinch of sugar and salt. The rice should be little sticky
2.The only thing to be purchased might be the lemon grass, which is easily available in any supermarket. Else the best substitute for lemon grass is lemon zest
3.You can add any vegetables of your choice. Preferably hard vegetables
